At Fragrance Jeju, bread comes first.

Lee Kyungsoon began baking in Chuncheon in 1997 and has continued the same work in Jeju.

Nearly three decades later, she is still looking at new ingredients, new breads and changing bakery trends.

Then there is the coffee.

Yun Jongwon roasts the beans himself and brews them one cup at a time by hand.

Fragrance Jeju is run together by Lee Kyungsoon, Yun Jongwon and their daughter, Yun Jiyoung.

Bread, coffee and the Jeju sea meet in one quiet space.

THE BAKERY

Bread comes first.

Bread is the first reason I remember Fragrance Jeju.

Lee Kyungsoon has never spent all those years making only the same bread.

Baguettes, bagels, ciabatta, focaccia, brioche-style loaves and breads made for cafés and brunch menus have all been part of her work.

As ingredients change and people look for different breads, she keeps studying what comes next.

SINCE 1997

From Chuncheon to Jeju.

Lee Kyungsoon began baking in Chuncheon in 1997.

She moved to Jeju around ten years ago, but the work itself did not change.

The place changed. The path did not.

Nearly thirty years later, baking is still the work she continues every day.

STILL STUDYING

Nearly thirty years in.

Experience has not made her less curious.

She still tries different flours, looks for better ingredients and follows how baking is changing.

Even recipes she has made for years are reconsidered when she finds a better method.

For me, that says more about her bread than the number of years alone.

Nearly thirty years in, she is still studying it.

BREAD TO GIVE

The place I think of for a gift.

When I need to bring bread to someone in Jeju, Fragrance Jeju is one of the first places I think of.

Choosing bread for myself is easy. Choosing bread for someone else usually takes a little more thought.

Here, I rarely have to think too hard.

In my own experience, it is one of the places where I have felt most comfortable choosing bread to give.

HAND DRIP

I came for the bread.

I first came to Fragrance Jeju for the bread.

After a few visits, the coffee became another reason to remember it.

Yun Jongwon roasts the beans himself and brews the coffee one cup at a time by hand.

I am not someone who can explain coffee through acidity, balance or detailed tasting notes.

But even to me, the aroma was immediately memorable. I liked the taste just as much.

ROASTING

The coffee does not begin with a bag of roasted beans brought into the café.

Yun Jongwon learned roasting himself and roasts the beans on a Fuji Royal roaster.

Those beans then become the hand-drip coffee served at Fragrance Jeju.

Before the roast.

Before roasting, there are the green beans.

Looking, sorting and deciding how they should be roasted are part of the process before a cup is ever brewed.

LEARNING THE COFFEE

Learning the process.

A certificate kept at the café records Yun Jongwon's completion of a Slow Coffee Roasting Class in 2018.

For him, coffee was not simply something added to a bakery café. It began with learning the process.

BREAD & COFFEE

Fragrance Jeju makes the most sense when the bread and coffee are on the same table.

Bread shaped by Lee Kyungsoon's years of baking. Coffee roasted and brewed by Yun Jongwon.

They come from different kinds of practice, but meet in the same place.

BY THE SEA

Jeju beyond the window.

Beyond the window, Jeju City and the sea stretch out together.

Fragrance Jeju is not only a place to pick up bread and leave.

It is also somewhere to sit quietly with coffee, bread, music and the view outside.

FOR SMALL SHOPS

Baking for a real menu.

The baking classes here are practical by design.

Rather than covering all kinds of cooking, they focus on breads and baked goods that can actually be used in a small café or bakery.

Bread for brunch. Bread for sandwiches. Products that can be prepared efficiently in a small operation.

The goal is not only to learn a recipe. It is to think about whether that recipe can work in a real shop.
